Did someone say Burritos?????





I found this recipe on the message boards of myfitnesspal.com, I revised it a little bit to meet my needs, Enjoy!

Steak Burrito Meat

Serves 10

2 lbs Sirloin Tip Roast

2 envelopes taco seasoning mix

1 medium onion

1 Rotel (diced tomatos w/ green chilies)

1 T white vinegar


Coat crockpot with nonstick cooking spray or use bag insert. Put roast in crockpot. Sprinkle all over with the taco seasoning. Top with onion, rotel & vinegar. Cover & cook on low for 8-9 hours.

Remove meat from crockpot and cool slightly. Shred meat with two forks. Return to slow cooker & stir thoroughly; heat through.

Put on your favorite low-cal wheat tortillas, pita bread etc, top with shredded cheese, tomatoes, lettuce, light sour cream or whatever you like. This would also be good on top of a bed of lettuce! Be sure to count the "extra" in your calorie count, the calories below is just for 3.2 oz of meat. Enjoy!
