Low Carb Breakfast Pizza

 

 
Low-Carb Breakfast Pizza

Crust:

1 1/2 cups block cheese, I used Montery Jack
1 cup almond flour
2 oz. cream cheese
salt to taste


Toppings:

4 eggs
2-4 T. heavy whipping cream
Meat of choice, sausage, bacon, ham
any other topping you like that are low carb
Shredded Cheddar Cheese
Hot Sauce, optional

1. Preheat oven to 400 degrees.
2. Shred your cheese and place it in a microwave safe bowl along with the cream cheese, cook for 1 minute and then take it out and stir, place back in for 30 seconds.
3. Add almond flour and stir, does best when its warm so try to do this right away after taking out of microwave.
4. Place parchment paper on baking sheet and roll the dough out flat as thin as you can.
5. Bake crust for 5 min.
6. Prepare your meat of choice.
7. Break eggs and combine with heavy whipping cream, pour into skillet and make into scrambled eggs.
8. Spread eggs and meat over the crust, shred cheddar cheese over top and place back in over for another 10 minutes or until golden brown and bubbly.

"Biscuits" and Gravy - Yes they are low carb!

Sometimes you just need some comfort food - I really had my doubts about these biscuits and gravy but was pleasantly surprised!

 Low Carb Biscuits

1 1/2 cups almond flour
1/4 tsp salt
1 T. baking powder
2 eggs
1/3 cups sour cream
4 T. butter (melted)
1/3 cups shredded cheese
1/2 tsp. garlic powder

1. Preheat your over to 400 degrees.
2. Spray your pan - (suggetion: use a brownie pan)
3. Combine all dry ingredients.
4. In a separate bowl combine the wet ingredients.
5. Once both are well combined mix them together, after it is well combined sprinkle in the cheese.
6. Scoop out the biscuits into your pan, I used an ice cream scoop for consistency.
7. Bake 10-12 minutes or until golden brown.

Taco Soup

This was a simple recipe since I already had the taco meat browned up and ready to go! Simple for a long day after work. I added salsa, avocado and sour cream to the top!

   


















CHERI'S CREAMY SOUTHWESTERN TACO SOUP 
1 pound ground beef
2 3/4 ounces onion, chopped, 1/2 cup
2 cloves garlic, minced
1 tablespoon cumin
1 teaspoon chili powder
8 ounces cream cheese, softened
2 10-ounce cans Ro-tel tomatoes, undrained (tomatoes with green chilies)
2 14.5-ounce cans beef broth
1/2 cup heavy cream
2 teaspoons salt, or to taste

In a large soup pot, brown the ground beef with the onion and garlic; drain. Add the spices and cook a couple minutes. Drop the cream cheese in bits into the meat. With the back of a big spoon, smash it into the meat until no bits of white remain. Stir in remaining ingredients and heat through.
Makes 8 cups or 6-8 servings
Freezing not recommended

FatHead Taco Pizza

We are trying to eat low-carb so I found this fathead pizza crust recipe on the following blog: https://killerketoblog.wordpress.com/2016/01/11/fathead-pizza-crust/


Fathead Pizza Crust
Ingredients:
  • 1 1/2 cups shredded mozzarella
  • ¾ cup almond flour
  • 2 tbs cream cheese, cubed
  • 1 egg
  • 1 tsp xanthan gum (optional)
  • garlic powder
  • sea salt
1. Preheat oven to 425 degrees
2. Measure out almond flour, add garlic powder, salt, and xanthan gum and stir in a bowl. Put cheeses into a microwave safe bowl and heat for about a minute and 20 seconds.  Stir the cheeses for 30 seconds; add almond flour mixture and egg. If it is too stringy, heat for another 20-30 seconds in the microwave. Wet hands and form into 5 balls on a baking sheet with parchment or a baking mat. 3. Spread with wet hands. You want it to be relatively thin so that it is crispy (unless you like really soft doughy texture for your pizza).
3. Poke the crust all over with a fork. Bake for 8 minutes. Poke down bubbles with a fork and cook an additional four minutes or until crust is browned.


I used ground turkey for our taco meat, you could use beef or anything else your family prefers. I like to make my own taco seasoning because it is less sodium and carbs :)


 Homemade Taco Seasoning (Large Batch)

1/2 cup + 2 Tablespoons chili powder
3 Tablespoons cumin
1 Tablespoon salt
1 Tablespoon finely ground pepper
1 Tablespoon paprika
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons dried oregano
Mix all ingredients together then store in an airtight container or jar with a tight fitting lid.
To use: brown 1lb ground meat then add 2 - 2-½ Tablespoons taco seasoning mix plus 1/3 cup broth (any kind) and simmer until broth has thickened, 1-2 minutes.


Sunday Prep Day

Usually on Sunday afternoons its pretty relaxed in our house. Our oldest is watching football, youngest is on the computer and my husband is on the couch "watching tv" and looking at things for sale on his phone. Its kind of nice to have the down time! I am usually looking up recipes on pinterest, other blogs or facebook groups and trying to figure out what we are going to eat for the week. We both work full time and our oldest is a sophomore who wrestles so we are gone quite a bit cheering him on.
Right now I am prepping 2 lbs of taco meat, a Fathead pizza crust is in the oven, chicken has already been smoked, lettuce/veggies are all washed and cut up. I try to make the week be as easy as possible so we dont eat out or put a frozen pizza in the oven for supper!

Breakfast Egg Tacos

Egg "Tacos"

Eggs
Heavy Whipping Cream

Mix the desired amount well and heat a small skillet, melt coconut oil and let puff up, turn over and brown other side.
Fill you "taco" with your favorite breakfast ingredients!
Such as:
Bacon, Sausage, Ham, Cheese, Mushrooms, Peppers, Onions, Salsa


Low Carb Cheeseburger Pie


Cheeseburger Pie

1 lb ground beef
1 packet onion soup mix
2 eggs
1/2 cup mayo
1/4 cup heavy cream
8 oz cheddar cheese, shredded
Salt and pepper

Brown beef and half of soup mix. Drain fat and season to taste with salt and pepper. Stir in the remaining soup mix and put the meat in greased pie plate. Stir in half of the cheese, then top with the remaining cheese. Whisk the eggs, mayo, cream and a dash of pepper well. Pour evenly over the meat. Bake at 350 degrees for 30-35 min. Let stand 10 min before serving.

Fake Cheez-Its and Pickle Dip

Another low carb recipe I tried today but actually LOVED! Who knew you could bake slices of cheese and they would crisp up into cracker like yumm-ness!

Cut up your favorite kind of cheese slice into 4 squares

Place on parchment paper and bake 30-60 minutes at 250 degrees. I baked mine for 60 min because I liked them extra crispy!

Low Carb Lifestyle

After 2 years of not posting I thought maybe it was time again :) I am currently following a low-carb diet right now. I aim for about 25 net carbs a day. Today I am trying out a few new recipes to make this weeks eating a little more exciting. First I am making Peanut Butter Protein Cookies! I am omitting the agave/stevia it calls for. They just came out of the oven and I took a bite and wished I would have used that sweetener lol. They aren't terrible, just not what I expected. 

PB Protein Cookies

3 whole eggs
1 tsp vanilla
1/3 c peanut butter
3/4 c protein powder (I used 1 single packet of Qwest peanut butter protein and made up the difference with PB fit, peanut butter powder)
1/4 C. agave or stevia (optional)
Coconut spray


Stir together, spray pan, roll into balls and then sprinkle with protein powder and press down with fork. Cook 5-6 min at 325 degrees.
