Nacho Average Taco Pizza

We LOVE tacos, nachos and pizza in our house. This recipe was created to make all three of our favorites collide 😊

Nacho Taco Pizza
1 premade pizza crust or can of pillsbury crust
1 lb of ground beef, browned
1 packet of taco seasoning
Cheez Whiz (jar)
1 pkg shredded mozzarella cheese
Toppings
Shredded cheddar
Taco chips
Shredded lettuce
Tomatoes
Sour cream

Brown the meat and add the seasoning, mix half a can of pizza sauce with seasoned meat. Spread cheez whiz over crust to your liking, spread the meat/sauce over cheesy crust. Sprinkle the shredded cheese on top and bake at 400 degrees until golden brown. It will depend on the type of crust you use but should be 20 min or so.
Once its cooled a little and cut. Spread the lettuce, tomoatoes, crush the chips and sprinkle with the shredded  cheddar cheese... Any other toppings you like and enjoy!

Sausage, Potatoes and Beets.....ROASTED!

 Roasted Sausage, Potatoes and Beets


1 pkg smoked sausage
1-2 white potatoes
1-2 sweet potatoes
1 beet
Coconut Oil or Olive Oil

Cut up potatoes and beets to equal size and spread out on baking sheet - drizzle with oil and season to your liking, salt, pepper, seasoning salt, garlic, whatever you like!
Roast in oven at 450 degrees until veggies are tender - you can add sausage towards the end or in the beginning, just depends on how crispy you like your meat.



FRUIT SALAD - YUMMY YUMMY

FOUR FRUIT COMPOTE

This is my mom's recipe - its quick easy and everyone seems to LOVE it! It makes a nice compliment to breakfast or a meal at night throughout the week. Make ahead :)

1 can (20 oz.) pineapple chunks
1/2 C. sugar
2 T. cornstarch
1/3 C. orange juice
1 T. lemon juice
1 can mandarin oranges, drained
3-4 peeled apples, chopped
2-3 bananas
1 C. grapes
(Any other fruit you have on hand works too)

Drain pineapple, reserving 3/4 C. of the juice. In a sauce pan combine sugar and cornstarch. Add pineapple juice, orange juice and lemon juice. Cook and stir over medium heat until thickened and bubbly. Cook and stir 1 minute longer. Remove from heat, set aside. 
In bowl, combine all of the cut up fruit, pour warm sauce over the fruit. Cover and refrigerate overnight. Enjoy all week :)
This is the sauce while on stove top.


Sweet Potatoes for Breakfast, YES PLEASE :)

Sweet Potato and Sausage Skillet


To prep for the week I peeled and sliced a sweet potato. I soaked the sliced potatoes in water inside of a zip lock bag and placed it in a bowl so it wouldn't leak. When I wanted to make this I would pat dry some potatoes and proceed with the recipe.

For a single serving you would cut up some pre-cooked sausage links and however many potatoes you want.
Place coconut oil in a skillet and fry the potatoes until golden brown, add the sausage links toward the end so they are heated thru. Enjoy!

You can use Olive Oil if you want.


These are very handy but you can use any kind of pre-cooked sausage in this recipe.

I have been trying to plan ahead and prep over the weekend for our nightly meals. It can be hectic when you work full time and have kids in nightly activities.

I have found if I find 5 recipes and cook the meat or cut up the veggies I will stick to cooking vs. eating out.


Prepping for the week
I put 6-8 boneless skinless chicken breasts in my slow cooker on Sunday afternoon with some water in the bottom and let them cook for 4-6 hours. Cut the chicken up and stored in the fridge for the weeks recipes.







Monday

Chicken & Wild Rice Soup
 5-6 C. water or chicken broth
1 package long grain and wild rice - ready rice (pictured)
1 envelope chicken noodle soup mix
1 celery rib, chopped
1 medium carrot, chopped
1/3 C. onion, chopped
2 cans cream of chicken soup
1 cup cubed cooked chicken
In a large saucepan, combine water/broth, chicken soups and veggies, bring to a boil and cook until tender, next add the remaining ingredients, simmer for for 15 more min and serve.


















The night before I put the broth, soups and veggies in my pot so I could just grab it from fridge and put on stove top.




Tuesday

Chicken Alfredo
Fettuccine Noodle or whatever you want to use - I used Penne this time
1-2 C. cooked chicken breast (you can season with garlic and herb seasoning)
1 Packet of Knorr Pesto sause mix
1 Jar of Bertolli Mushroom Alfredo sauce
1 pkg frozen broccoli florets
diced onions
minced garlic
Large pkg of fresh sliced mushrooms (optional)

Saute the onions, garlic and mushrooms in some olive oil.
Meanwhile boil the noodles according to the pkg directions.
I actually bought the steamers broccoli and put it in the microwave so it was tender. Once the noodles were done I drained them and mixed everything together until combined and simmered it until it was heated through. My kids dont like mushrooms so I didn't use any.












Wednesday

Crock Pot Soup
 1.5 lbs ground beef

 1 small onion
1 can cream of mushroom soup
1 pkg. frozen mixed vegetables
1 can V-8 juice
1.5 T. Worcestershire sauce
1 C. chopped celery
1/2 tsp. salt
1/4 tsp. pepper

Brown meat and onion, drain.
Put in slow cooker with rest of ingredients. Cook on low all day and come home to a great soup!

I usually buy the thin pre-made crusts and just top them with whatever everyone wants, usually its taco pizza in our house, I will post the pictures next pizza night :)
