I made these this week! Very easy and very good low-calorie meal! They would also be great to make on a sunday and grab as a quick breakfast thru-out the week.
Ham, Egg & Cheese Cup
1 cup (4 oz.) shredded fat-free cheddar cheese
6 eggs
4 egg whites
3 T minced chives
2 T skim milk
1/4 tsp salt
1/4 tsp pepper
Divide ham evenly among eight muffin cups coated with cooking spray; top with cheese. In a large bowl, beat eggs and whites. Stir in chives, milk, salt and pepper. Pour over cheese, filling each muffin cup 3/4 ful.
Bake at 375 for 22-25 min or until a knife inserted near the center comes out clean.
Serves 8 egg cups - 106 calories per serving, 4 g fat, trace fiber, 14 g protein.
