No Bake Granola Bars
These are SO GOOD!
They taste similar to peanut butter rice krispie bars but they are so much better for you!!
3 Cups Whole Grain Cheerios (or Rice Krispies)
3 Cups Old Fashioned Oats
1 Cup Brown Sugar
1 Cup Honey OR Agave Nectar
1 Cup Creamy Peanut Butter
2 teaspoons vanilla
2/3 Cup Mini Chocolate Chips
Line a jelly roll pan (cookie sheet) with wax paper. Put the chocolate chips in the freezer. Heat the brown sugar & honey in a sauce pan over medium heat until smooth. Add peanut butter and vanilla and stir until everything is mixed well. Remove from heat & pour over the cheerios & oats in a mixing bowl and stir well. Add chocolate chips and stir them in. Press mix into the jelly roll pan and chill 30 minutes or until solid.
Cut into 32 bars:

.3oz sugar free gelatin dessert (like jello) – any flavor
1 cup (8oz) boiling water
1 cup (227g) fat free plain yogurt (vanilla would be good with some flavors too!)
Dissolve the gelatin mix in the boiling water. Whisk in the yogurt. Refrigerate for about 2 hours until set.

Flat Out Pizza
Flat Out has a new Artisan Flatbread that is great for pizzas because it is thicker than the tortillas the first came out with. I made taco pizza with Morningstar Crumbles, refried beans, sour cream, baked Nacho Doritos, and some diced tomatoes (no salt added). You could make whatever kind you want. I also bought some pizza sauce (no salt added), canadian bacon, turkey pepperoni, and mushrooms to try out different flavors. I'm trying to cut back on my sodium, which is why I am buying "no salt added" items.

I found this recipe on the message boards of myfitnesspal.com, I revised it a little bit to meet my needs, Enjoy!
2 lbs Sirloin Tip Roast
2 envelopes taco seasoning mix
1 medium onion
1 Rotel (diced tomatos w/ green chilies)
1 T white vinegar
Coat crockpot with nonstick cooking spray or use bag insert. Put roast in crockpot. Sprinkle all over with the taco seasoning. Top with onion, rotel & vinegar. Cover & cook on low for 8-9 hours.
Remove meat from crockpot and cool slightly. Shred meat with two forks. Return to slow cooker & stir thoroughly; heat through.
Put on your favorite low-cal wheat tortillas, pita bread etc, top with shredded cheese, tomatoes, lettuce, light sour cream or whatever you like. This would also be good on top of a bed of lettuce! Be sure to count the "extra" in your calorie count, the calories below is just for 3.2 oz of meat. Enjoy!

Ham, Egg & Cheese Cup - 106 Calories per cup
I made these this week! Very easy and very good low-calorie meal! They would also be great to make on a sunday and grab as a quick breakfast thru-out the week.
1/4 pound cubed fully cooked ham
1 cup (4 oz.) shredded fat-free cheddar cheese
6 eggs
4 egg whites
3 T minced chives
2 T skim milk
1/4 tsp salt
1/4 tsp pepper
Divide ham evenly among eight muffin cups coated with cooking spray; top with cheese. In a large bowl, beat eggs and whites. Stir in chives, milk, salt and pepper. Pour over cheese, filling each muffin cup 3/4 ful.
Bake at 375 for 22-25 min or until a knife inserted near the center comes out clean.
Serves 8 egg cups - 106 calories per serving, 4 g fat, trace fiber, 14 g protein.

1 14oz package Butterball Everyday Smoked Turkey Sausage
4 cups packaged shredded cabbage with carrot (coleslaw mix)
1 1/2 cups coarsely chopped red potatoes
1 medium red bell pepper, chopped
1 medium onion, chopped
2 14 oz cans chicken broth
1 Tbsp spicy brown mustard
1 Tbsp cider vinegar
Salt and Pepper
In a 5 to 6 quart slow cooker, combine bratwurst, cabbage, potatoes, red pepper, and onion. In a large bowl, whisk together broth, mustard, vinegar and salt and pepper. Pour over mixture in cooker.
Cover and cook on low heat for 6 to 7 hrs or on high for 3 to 3.5 hrs.
Makes 6 servings

1 Cup Shredded Colby n Monterey Jack Cheese
1/2 Bag Ore Ida Cottage Fries
Brown Hamb and onion, add corn. Spray a 9x9 casserole dish and put meat and corn in. Sprinkle with cheese, top with cottage fries.
Bake @ 400 degrees until heated thru. At end you can put under broiler if you want the fries to be crisper.

1 T olive oil
1/2 t Kosher salt
1/2 t Pepper
1/4 c grated Parmesan cheese
Preheat Oven to 450 F
In a large bowl combine cauliflower, oil, salt and pepper; toss to combine. Transfer cauliflower to a large baking sheet and spread into a single layer. Roast until cauliflower is golden brown, tossing occasionally, about 15 minutes. Remove from oven, place in serving bowl and sprinkle with cheese; toss to mix.
Yields about 3/4 cup per serving.

This is a really good light desert:
Combine these items into a saucepan and bring to a boil. Stir constantly until it thickens:
1 Tbsp Cornstarch
1/4 Cup Sugar
1 Cup Water
1 Pkg sugar-free raspberry gelatin
Put 4 cups of fresh raspberries into a 9 inch graham cracker pie crust. Pour the gelatin mixture over the berries and chill for 2-3 hours.
Add some whipped cream!

Crockpot Breakfast (6 Points)
(You can make this the night before and have it all ready to go first thing in the morning!)
32 oz frozen hash browns
1 lb cooked ham cubed ( lean )
1 onion diced
1 green pepper diced
1 1/2 c shredded cheese ( Regular Cheese )
12 eggs
1 c skim milk
1 t salt
1 t black pepper
Divide potatoes, ham, veggies and cheese so you can create several layers of each in the crock pot. Start with the hash browns, then ham, onions peppers and last cheese. Repeat until you have several layers. Beat eggs, milk salt & pepper pour over layers in the crockpot cover and turn on low. Cook for 10-12 hours overnight.
