We got a blizzard so I decided to make us a good breakfast since we usually don't have time for that. This turned out really awesome! You could do some substitutions to make this even healthier (splenda instead of sugar, egg beaters instead of eggs, etc) I just used what I had on hand and the calories below are from what I used. I bet you could use strawberries, raspberries or whatever your family likes best!
Baked Blueberry French Toast
1/2 Cup white sugar
2 1/2 tsp Cornstarch
1 tsp ground cinnamon
3/4 C water
2.5 C fresh or frozen blueberries
2 Eggs
2 C skim milk
1 tsp vanilla extract
12 slices of french bread
In a large bowl, combine sugar, cornstarch and cinnamon; stir in water until smooth. Add blueberries; mix well. Transfer to a 13x9 baking dish coated with cooking spray.
In another bowl, beat the eggs, milk and vanilla. Dip each slice of bread into egg mixture; arrange slices over berries.
Bake at 400 degress for 20-25 min or until toast is golden brown and blueberries are bubbly.
Yield - 6 Servings. (2 slices toast w/ approx 1/2 cup of blueberries)
