FOUR FRUIT COMPOTE
This is my mom's recipe - its quick easy and everyone seems to LOVE it! It makes a nice compliment to breakfast or a meal at night throughout the week. Make ahead :)1 can (20 oz.) pineapple chunks
1/2 C. sugar
2 T. cornstarch
1/3 C. orange juice
1 T. lemon juice
1 can mandarin oranges, drained
3-4 peeled apples, chopped
2-3 bananas
1 C. grapes
(Any other fruit you have on hand works too)
Drain pineapple, reserving 3/4 C. of the juice. In a sauce pan combine sugar and cornstarch. Add pineapple juice, orange juice and lemon juice. Cook and stir over medium heat until thickened and bubbly. Cook and stir 1 minute longer. Remove from heat, set aside.
In bowl, combine all of the cut up fruit, pour warm sauce over the fruit. Cover and refrigerate overnight. Enjoy all week :)
